Healthy Chicken Chow Mein

Whenever I feel low on energy, this delicious recipe is the mood changer as the flavours in it take you on the different zone. Do cook and enjoy it with your family or loved ones.

Ingredients
  • 250g         packet dried egg noodles
  • 2 tsp         sesame oil
  • 1/2 tsp      five-spice powder
  • 500g         Chicken Breast, Clean and sliced
  • 2 tsp         vegetable oil
  • 1 Inch       piece fresh ginger, peeled, finely grated
  • 3               garlic cloves, crushed
  • 150g         Oyster mushrooms, halved if large
  • 4 tbsp       White and Green Spring Onions, Chopped
  • 2 tbsp All Color Bell Peppers, Chopped
  • 1/4 cup     salt-reduced chicken stock
  • 2 tbsp       salt-reduced soy sauce
  • 1/4 cup     Oyster sauce
  • 2 tbsp       kecap manis
  • 2 cups       bean sprouts, trimmed
  • Fresh coriander leaves, to serve
  • Sliced red chilli, to serve
  • Lime Slices, to serve
Directions

Step 1

Prepare noodles as per packet directions or OR – For 250 gm noodles, heat 1.5 litres of water in a pan on high heat till it comes to a boil. – Add the noodles and stir it lightly for it to open up. – Boil it for 2-3 mins, should not be soft but “al dente”. – Drain it in a colander and wash it with cold water to stop the cooking. – Add 1 tsp of oil and mix it well to coat the boiled noodles so that they don’t stick. – Set it aside.

Step 2

Combine 1 tsp Sesame Oil and five-spice powder in a mixing bowl. Add sliced chicken and stir to coat.

Step 3

Heat the oil in a deep skillet over high flame. Stir in the chicken slices for 3 to 4 minutes until brown in colour. Dish it out.

Step 4

Add ginger and garlic to the same skillet. Fry it for 1 minute. It will release the aroma. Add in chopped Mushrooms, chopped bell peppers and fry it for 3 minutes or until softened. Add noodles, stock, all sauces, bean sprouts and spring onions . Stir-fry until chicken is fully cooked for another 5 minutes.

Step 5

It’s done. Garnish it Coriander and serve it with lime slices. Your delicious and Healthy Chicken Chow Mein is ready to be served.
