Feta Cheese Shrimp Pasta

Ingredients :
  • 1 (12 ounce) package rice vermicelli
  • 1 large tomato, diced
  • 4 green onions, diced
  • 2 pounds cooked shrimp, peeled and deveined
  • 1 ½ cups prepared Thai peanut sauce
Recipe Tips :
  • You can try these optional ingredients, Frozen cooked shrimp, dried seasoning and canned diced tomatoes all work just fine.
  • With frozen cooked shrimp, keep the flame low & not too long or the shrimp will be tough.
Directions :

Step 1

Bring a large pot of water to a boil. Add rice vermicelli, and cook 3 to 5 minutes or until al dente; drain.

Step 2

Take a large saucepan and heat the olive oil. Stir in the chopped garlic in the olive oil until golden in colour.  Add green onion and jalapeno peppers; sauté about 4 minutes.

Step 3

Stir in the chopped tomatoes and salt and pepper. Add in the parsley. Reduce heat.

Step 4

In a medium saute pan, toss the shrimp with the 1 tablespoon olive oil. Cook over medium heat until shrimp become pink. Season it  with salt- pepper and mix in the tomato sauce.

Step 5

To serve, sprinkle the feta cheese over the shrimp.
