Carrot Soup

Ingredients :
  • 2 Cups – Baby Carrots or regular Carrots (Cut into medium size)
  • Onion – Medium sized
  • Garlic Cloves – 3 to 4
  • Ginger paste – ½ Teaspoon
  • Pepper Powder – ½ Teaspoon
  • Salt to taste
  • Red Chilli Powder (Optional)
  • Olive oil or Butter –  2  tablespoon
  • Vegetable broth – 2 ½ Cup (Optional) (Water)
  • Coconut Milk – ¼ Cup
Directions :

Step 1

Heat 2 tbsp butter (olive oil if you want you can add vegan oil) in a non-stick or thick saucepan and saute chopped onion over medium heat. Add grated garlic. When onion becomes soft, add carrot, ginger, black pepper. Saute for a while then add the broth (Add plain water in case of unavailability of the vegetable broth).

Step 2

Now the mixture is to be cooked soft over medium heat. Later put it in the instant pot and cooked it in pressure for 10 minutes.

Step 3

When all ingredients are cooked fully, take a hand blender and convert all ingredients into a fine paste.

Step 4

Finally add salt, (Chili Optional), Coconut Milk and cook again on low heat for 1-2 minutes

Your delicious Carrot Soup is ready ! Garnish the soup with cilantro, mint leaves, or basil. If you want carbs, you can add croutons, or eat with your favorite bread and salad.
