A chicken burrito is a Mexican-style wrap. It is made with a flour tortilla, filled with a variety of ingredients such as cooked chicken, refried beans, onion, capsicum/bell peppers, corn, rice, coriander/cilantro, cheese, salsa, and lettuce. The chicken is usually cooked and shredded, and the filling is sautéed in a skillet over medium heat. The burrito is then rolled up tightly. It is either baked or pan-fried to melt the cheese and warm it up.
Ingredients:
- Shredded chicken
- Canned corn
- Cheddar cheese
- Sour cream
- Chopped cilantro
- Garlic
- Cayenne chili powder
How to make Chicken Burritos?
- Preheat oven to 400°F and spray a 9×13″ casserole with non-stick spray, set aside.
- Remove skin from chicken and pick the meat off in bite-size pieces. Place into a bowl. Set a 12″ skillet over medium heat, add burrito filling ingredients. Stir to combine.
- Place 1/4 of the chicken mixture onto a tortilla. Fold and roll tortilla to completely enclose filling. Later place it seam-side down, in a small baking dish. Repeat to fill and roll remaining tortillas. Sprinkle the remaining cheese over top.
- Reduce heat; stir in tomatoes, seasonings and, if desired, jalapeno. Cook 5 minutes. Add chili and cream cheese. Stir until cream cheese is melted. Stir in chicken. Spoon about 1/2 cup filling across center of each tortilla; sprinkle each with 1/4 cup Colby-Monterey Jack cheese.
- Drizzle 1 tbsp. oil over chicken, mix to coat. Sprinkle with Seasoning, toss to coat. Cook chicken – Heat 1 tbsp oil in a large skillet over high heat. Add chicken, cook 2 minutes. Turn and cook 1.5 minutes. Remove it and then let it rest 2 minutes then chop.
- Warm vegetable oil in a large skillet over medium-high heat. Add chopped onion and cook until softened about 3 minutes. Add garlic and cook.
- Serve the burritos with your favorite toppings. Enjoy your meal!
