Greek Salad

Ingredients:
  • 2 tomatoes, chopped
  • 1 cucumber, peeled and chopped
  • 1 red onion, thinly sliced
  • 1 bell pepper, chopped
  • 1/2 cup pitted Kalamata olives
  • 4 ounces feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
Directions:
  1. In a large bowl, combine the tomatoes, cucumber, onion, bell pepper, olives, and feta cheese.
  2. In a small bowl, whisk together the olive oil, red wine vinegar, oregano, salt, and pepper.
  3. Pour the dressing over the vegetables and toss to coat.
  4. Serve the salad immediately or refrigerate until ready to serve.
Optional additions:

You can also add lettuce, capers, or other vegetables to the salad or substitute the feta cheese with another type of cheese if desired. Enjoy!
