Misal pav is a popular street food in the western Indian state of Maharashtra. It consists of spicy-misal (a mixture of sprouted lentils and vegetables) served with pav (a type of Indian bread). Here is a recipe for making misal pav at home:
Ingredients:
- 1 cup dried sprouted moth beans (matki)
- 1 small onion, finely chopped
- 1 small tomato, finely chopped
- 1 green chili, finely chopped
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- 1 tsp coriander seeds
- 1 tsp garam masala
- 1/2 tsp turmeric
- 1/2 tsp red chili powder
- Salt, to taste
- 2 tbsp oil
- 2 cups water
- Pav (Indian bread rolls)
- Chopped onions, coriander leaves, and lemon wedges, for garnish
Instructions:
- Rinse the sprouted moth beans and soak them in water for at least an hour.
- Heat the oil in a pan over medium heat. Add the mustard seeds and wait until they start to splutter.
- Add the cumin seeds, coriander seeds, garam masala, turmeric, and red chili powder. Stir for a few seconds until fragrant.
- Add the onions and green chili and cook until the onions are soft and translucent.
- Add the tomatoes and cook for another 2-3 minutes.
- Drain the soaked moth beans and add them to the pan. Stir to coat the beans with the spice mixture.
- Add 2 cups of water and bring to a boil. Reduce the heat to low and simmer for 10-15 minutes or until the beans are tender.
- Season with salt and adjust the spices to taste.
- To serve, place a spoonful of the misal in a bowl and top with some chopped onions, coriander leaves, and a lemon wedge. Serve hot with pav on the side. Enjoy!
